Fennel Frond Pesto or Dip

Put the following ingredients into a food processor and mix well:

  • 1/2 cup Walnuts (optional)

  • 1/4 cup Olive Oil

  • 1/4 cup Water

  • 2-3 cups Fennel Fronds

  • 2 Garlic Cloves (or dice 3-4 garlic scapes); if you have onion tops you can add some of those into the food processor mix for extra flavor and nutrition

  • 2 tsp Fresh Lemon Juice (or use sorrel and add a tsp of water)

  • Sprinkle of Salt to Season

To make a dip you can replace the water with sour cream.

If you happen to love this enough to double it (like we did!) you can freeze extra in ice cube trays for use later on pesto, in soup, on chicken or for dipping of course!
