Lemon-Herb Roasted Beets

Roasting brings out the beet’s sweetness!


• 2 Cups golden or red beets cut into pieces or wedges

• 3 Teaspoons olive oil

• A generous amount of cut up rosemary, marjoram and/or oregano

• 1 Teaspoon freshly grated lemon zest

• ó Teaspoon salt

• . Teaspoon freshly ground pepper

How to Prepare

• Mix together all ingredients in a bowl so that beets are well coated with herbs

and oil.

• Spread the beets evenly on a rimmed baking sheet.

• Roast on lower rack at 450 degrees F, stirring once until beets are tender and

browned (20-25 minutes).

• Toss 1 tablespoon lemon juice into the cooked beets before serving.
