Rosemary Roasted Squash (delicata or baby butternut)

Most winter squash skin is tough and not so delicious to eat – but not so with delicata! squash It is also known as sweet potato squash and can be prepared as you would a sweet potato.

Roasting baby butternut squash will soften the skin, making peeling unnecessary.


• 2 medium delicata or butternut squash

• 1 tbsp olive oil

• 1 shallot or medium sweet onion finely diced

• 4 Fresh rosemary sprigs

• Coarse salt and pepper to taste
