Unpacking your Box - week 7 (August 3, 2023)

Here's Sarah going over what's in your box this week!

Last week we neglected to harvest a green zucchini. Wanting desperately to be noticed that green zucchini grew huge!

What to do?

It's a great opportunity to slice lengthwise, scrape out the center - that might be a little soft - and fill with something delicious...these are called Zucchini Boats, and you can really make them with any medium sized zucchini as well. Here's a thought:

Hollow the zucchini, place in baking dish and sprinkle with oregano, thyme or marjoram - or any of the lovely herbs that are hanging in your kitchen drying from previous weeks' boxes.

Make a simple meat sauce (Italian sausage is great) with marinara, onion, garlic scapes or garlic; you can chop up a pepper and add too. Pile the sauce into the hollowed out zucchini and top with cheese. Bake for 40 minutes until the boat is browned. If you make a lot of sauce you can freeze it for next week - there will surely be more zucchini coming your way!
